Spring is the first appearance of ice cream. People say it's a Summer thing, but to me it's a Spring thing. I can never wait until the summer months to eat it, I break it out in Spring. And on Friday, we broke out the Bluebell Ice cream.
Here's what i made this weekend for our weekend menu:

Oh yum! The potato salad looks divine....
We ate lots and lots of asparagus: ravioli, risotto, salads, etc. The true sign of Spring to me!

This weekend I ate lots of homemade trail mix!
Potatoes are my fave! These both sound amazing, especially the potato-dill combo, yum!

I had an amazing dinner with duck on Friday, then went to a BBQ restaurant on Saturday and had ice cream yesterday. I definitely gorged myself as well:)

We busted out the ice cream too! I wanted to buy it week before last but Alex said no, that was just too early! On Friday night we had bruschetta-stuffed chicken (chicken stuffed with tomato, basil, and mozzarella) with steamed asparagus. That was the most exciting meal of the weekend, everything else was leftovers and quicker meals!
Could you post the recipes somewhere? I would love to try both of these. Gorgeous pics!

Your weekend menu looks great! I was selling at a craft show so I ended up with Taco Bell. :( Yours looks much better!
Ice Cream is an all around the year thing for me, but I love it the most in the winter. There is something so comforting and lovely about being in a sweater and eating a bowl of ice cream. In the summer it is almost too rich and creamy, so I prefer icier treats...like Popsicles and the amazingness that is Otter Pops.

Hahaha, LBB - i eat ice cream in any season, but in Spring I eat it all the time!

Mmmm... That potato salad is beckoning to me. I'm a BIG fan of gorging. And I fully plan on doing that when I go on vacation on Wednesday. Not a singly pastry in Paris will be safe!

I think I eat ice cream year round...but I definitely start to crave ice cream sandwiches, gelato, and root beer floats when the temp gets up above 65 degrees. Oh, and don't even get me started on fresh fruit... ::Drool::
I didn't eat anything as yummy as what you made, that's for sure! that flatbread looks amazing, I think I would eat it even though I don't particularly like onions or cheese! haha. and I am a total sucker for potato salad! geez, Dionne, you got me hungry now! :) (your photos never fail to do that!)

Yum! I was feeling spring + made potato salad this weekend, too. And with a Coldstone next door, ice cream is always on our menu.

we feasted as well! friday night was breakfast for dinner - blueberry pancakes! yum! Saturday was an afternoon spent at my sister's where we made four different homemade pizzas with all sorts of toppings and then had a sweets bonanza - two kinds of cookies and brownies. And Sunday included meeting a friend for brunch for one of my most favorite salads.
I'm still full!

The flatbread looks wonderful. I haven't worked much with dill but the few times I've eaten with potatoes the match seems perfect.
