
This lovely long weekend, Brian and I enjoyed the simple pleasures in life - coffee, cheese, strawberries and each other.
For lunch, we had simple sandwiches - and Brian, being half Korean, wanted egg in his sandwiches (every Korean I know is mad about eggs!). So we just sandwiched fried eggs, ham and cheese between yummy garlic bread. Garlic bread just isn't garlic bread without parsley, so if you've never made it before - make sure to mix in some fresh parsley with your butter, olive oil and garlic - it makes such a huge difference!

Since it was a hot day, we wanted a light dessert - but didn't feel like sorbet or frozen yogurt, so instead we made some meringues. I love how light they are, and they don't leave you all bloated and full. To make 6 little ones of your own, just take 3 egg whites and beat them until they're all peaky and stiff, along with half a teaspoon of salt, a drop of vanilla, and two tablespoons of sugar. Once that's done, just spoon it all onto some wax paper on a baking tray (6 blobs should do it) and bake it at 215 degrees for 1 hour and 25 minutes.

Once they're done, let them cool a bit, and then spoon over them a mix of 8 large sliced strawberries, a dash of lime juice, 8 sliced green grapes and two tablesoons sugar - they should come out looking as lovely as these above.

i am an egg lover tooo... in sandwiches, on fried noodles, in my kebab, as a main meal, etc. Its is completely and utterly satisfying:)

Dionne, you would have been proud of me over this weekend. Steve and I went to Vista and San Diego, so we had great food.
Roasted garlic chicken breast and provolone sandwiches, Home made waffles and bacon for breakfast with my dad, spicy shrimp enchiladas in Old Town San Diego, Avocado burgers by the beach, my dad's amazing BBQ steak with fresh corn on the cob and hand cut salad with cheese cake for dessert.
We even went to Stone Brewing Company and toured the brewery and had amazing beer samples.
It was kinda an awesome weekend.
My moth is completely watering!!! That sandwich looks to die for--would love it right now! I really need to start eating breakfast gain:)

Yesterday I felt like baking -- it was sort of dreary around here -- so I baked a batch of brownies and a loaf of banana bread. Yesterday's dessert was perfect... brownies a la mode. Drool!
Yes, I'm of the "live to eat" variety too. As I'm finishing one meal I'm already thinking about the next... it's terrible!
We had a lovely weekend too with a fun BBQ and then laying low with the kids - throwing the football, playing badmitton, so much fun.

mmm...delectable! lovin' the photos, Dionne...this past weekend we went down to the in-laws farm and dh + b-i-l had a riboff contest while the ladies had a dessert bakeoff...hubby won but it was a tough one for the desserts...i made mini oatmeal raisin cookie ice cream pies, carmel corn and mint chocolate cookies, s-i-l made lemon chiffon cuppies and brownies and the other s-i-l brought a bag of M&Ms lol! but i really like your simple yet light meal...i'm still stuffed-yikes!
