Making Meals and a "Pay-It-Forward" Giveaway

I am by no means a fabulous cook. I enjoy cooking for the people I love, but my cooking skills are nothing to rave about, but I love to try out new and easy recipes that make it almost fool-proof for me to be a bad cook. The other day I tried out a recipe for Shrimp Tostadas from Everyday Food, and it was FANTASTIC! It turned out so well! It's a really quick and easy meal to make - perfect for lunch or a light dinner, and just right for Spring. All you do is sprinkle some tortillas with cheese, put them in the oven for about 5 minutes until they turn into crispy tostadas. Then just fry up garlic, chopped zucchini, shrimp, spring onion, lemon juice, pepper, and cilantro and then mix it all up and top the tostadas with it. And it's perfect if you add a dollop of sour cream to the top!

Speaking of Spring and Food - it's barbeque season. I grilled up a steak this weekend, a really nice cut of beef. When I was younger, my family ALWAYS had their steak well done. Any sight of pink would freak my parents out, and so even though I had never tried it, it freaked me out too. But when I moved here to the USA, some friends convinced me to try Medium. The Pink definitely intimidated me at first, but now I wouldn't have it any other way.

Now onto the "Pay-it-Forward" part of my post.
On Lindsey's blog, she had posted about a Pay-it-Forward project that she was participating in from the blog Dabbled. It's such a fun idea. I saw that recipe for the shrimp tostadas, but haven't made it yet. After seeing your photo, um yeah, we're so having shrimp this weekend!!

I like my meat well... boring, I know. But no pink for me.

Your shrimp tostadas sound amazing, I will have to try that and make a chicken version for Daniel (he is allergic to shell fish).
Thanks for that! PS I like my steak medium as well, my grandpa used to make the BEST steak that way. Daniel still has his welldone, oh the juiciness he misses!

And no meat for me, ma'am. You've got a veggie on your hands here. I like what I believe you Aussie's call a Veggemite Sandwich.

But my father in law makes a huge deal every time he orders meat to have it black, hockey-puck style, end cut if they have it, and he'll send it back if it's even light brown. Gross!

That is an absolute brilliant idea--the pay it forward idea that is. And I have been dying to make those shrimp tostadas for a while and with your rave review I may have to make them soon. Isn't that just the best cookbook?

And just so you know, by the looks of your pictures, you seem to be fabulous cook! I love how you always experiment with new recipes.

As for the meat, I'm with your parents! I don't like any pink--at all. lol
