
It has been the perfect Picnic Weather lately, so it's been my mission to plan a picnic with friends. I am still deciding on the when and the where, but it's definitely something I want to do soon. I love sitting on a nice blanket outside in the sun, eating yummy food. We have a croquet set, so I will probably set that up too. I know one of the things I want to make is my "A" Salad.

The other night we went to a potluck, and everyone had to bring something starting with the letter A. My friend Lauren and I went shopping for ingredients to concoct our A-themed dishes. I ended up with Apples, Arugula and Almonds as my A ingredients. Lauren had the great idea to bread some chicken strips with the almond, and it turned out soooo good. Here's the recipe if you want to give it a whirl.
Ingredients:
-Arugula/Spinach mix (the Spinach cuts through the spicy flavor of the Arugula)
-Two types of Apples (i used Granny Smith and Gala)
-Almonds
-Chicken Breast
-Lemon Juice
-Breadcrumbs
-1 Egg
-Golden Raisins
-Rosemary Lemon Dressing (if you don't have it - just mix plain yogurt with lemon juice, honey, olive oil, white pepper, rosemary and a bit of salt)
Directions:
-Put the almonds in a ziplock bag and pound it until it's tiny little granules. Mix with breadcrumbs at ratio of 1:2 (almonds being the most)
-Whisk egg with some drops of lemon juice
-Cut chicken breast into strips and then dip pieces into the egg mix
-Then cover the now egg-sticky chicken strips into your almond-breadcrumb mix
-Pan fry chicken until cooked
-Mix everything in a salad bowl and only add the apple (thinly sliced) a few minutes before serving (since the apple tends to brown)
*if you need to put in the apple straight away, dip it in lemon juice, it slows down the browning.

I love picnics so much that I keep a picnic blanket in the car for impromptu lunches with the kids...even if it means grabbing PB&Js to eat at the park.
For more "planned" picnics I usually make pecan crusted chicken, shrimp salad, fruit salad and some sparkling lemonade. I might have to try your almond crusted chicken - that sounds delicious!
Your post brought me smells from my childhood weekends...Roasted chicken, strawberries, jam sandwiches and wine. Sparkling when we were little. I want to go to a picnic right now!

A few years ago, it's not a quite picnic, but my mom, my sis, and my two girls and I went to the beach (when I still lived there) and my mom made our favorite Japanese food and made a lunch box... It was the best thing ever!!!!
Gosh, now I miss my mom again..

Remember that time we had a picnic and you made us only bring pink foods??? I'm surprised that didn't get a mention. Probably because THERE AREN'T MANY PINK FOODS!!! We were just eating cupcakes with pink icing and slices of smoked salmon.
I forgot all about that, Eric! I remember Ross baked pink bread, and I made a pink potato salad (thanks to food coloring).
MMmmmm...that salad sounds great. Still a bit chilly here for picnicing, but soon it'll warm up, I'm sure!
I just had a picnic with my kids after school the other day...more of a snack picnic. It was fun. We went to teh libraru got books and had a reading picnic. Loved it! :)

That salad and croquet sounds like a perfect perfect picnic combination! Wish it was warm enough here for al fresco dining of any sort.

I would recommend fresh summer fruit, since they've just come into season.
I've always done barbecues instead of standard picnics though...

That salad sounds absolutely amazing-exactly what I would want in the ultimate salad. I love finger foods when it comes to picnics: olives, different cheeses, roasted tomatoes in olive oil, crunchy french baguette, grapes, and of course chocolate covered strawberries. It's a wide array of foods but that's what makes it so fun!

Love the picnic basket and the photo's are fab!!! Sadly I am having a hard time thinking about picnic fare, but we love bringing a frisbee, I know it sounds lame but it's so much fun doing something so lame...

I like to draw too. Taking an illustrator class right now and just bought the Wacom drawing tablet. LOVE IT! Do you use the tablet to draw your designs or is just straight from illustrator?
picnics: watermelon, carrots, hummus, tabouli, olives..... oh gosh, the possibilities are endless! it's picnic wether here, too, and i love it so much! and i just have to tell you again how fantastic your illustrations are, dionne. :)
